I’ve always been a big fan of vegan restaurants. In a state like New Mexico, vegan dining can be more difficult (even with the aid of tools like HappyCow). Encountering a place like VeganVato was like finding an oasis within this enchanting desert state.

Here’s what you need to know about this amazing restaurant.

What is VeganVato?

VeganVato is a vegan, ‘NewMexiCali’ style restaurant located in the southeast side of Albuquerque inside the Imperial Motel Complex. It’s a pretty pleasant area, and as long as you know the baseline of what to expect walking or driving in Albuquerque, you’ll find that it feels pretty safe.

Within the Imperial Motel Complex, the restaurant is nestled next to several other restaurants. There’s a bar, and if you visit at the right time, you’ll have the chance to listen to (or even participate in) some fun karaoke. To eat here, you’ll want to go Tuesday through Saturday between 12:30 noon and 8:30 PM.

VeganVato is veteran-owned, and it’s clear that the owner has a lot of passion for the food. Prior to this location, it was a food truck. Stopping by and grabbing a bite is a great way to support the next stage of this delicious project.

(An extra bonus: VeganVato has indoor seating, so no need to worry about how unpredictable New Mexico weather will impact your dining.)

What to Eat at VeganVato

Let’s be clear: everything on the VeganVato menu is certain to be delicious. That includes the seasonal items, which we can’t predict until you arrive at the restaurant cash-in-hand and have the opportunity to read what’s being offered.

The permanent menu is delicious. Beyond the basics, including a burger and several varieties of nachos and loaded fries, you can order tacos, a burrito, or a crunchwrap. These menu items include delicious mock-meats and mock-cheeses, so you won’t feel like you’re missing a thing. (In some ways, I’d argue they’re better than the ‘actual’!)

Other standard menu items include the Frito Pie, Philly Plate, or tostada. You also have the choice of customizing with several proteins, which include Impossible ground beef, seitan mushroom asada, birria-style jackfruit, BBQ tempeh, and jalapeno roasted cauliflower.

Whether you’re visiting solo or dropping by with friends and family, VeganVato has something on its menu for everyone. If someone isn’t convinced, rest assured: there’s plenty of variety in the nearby restaurant stalls, so no compromises are necessary.
